What's Cooking Wednesday

West African Peanut Soup 
adapted from 110pounds.com












Ingredients:
 -
1 tablespoon toasted sesame oil

1 cup cooked, diced chicken breast

2/3 cup onion, diced

1 1/2 teaspoon minced garlic

1 1/2 teaspoon curry powder

1/2 teaspoon sea salt

1/2 teaspoon ground black pepper

1/2 teaspoon crushed red pepper flakes

3 cups free-range chicken broth

1 6 ounce can tomato paste

1 large can stewed tomatoes

1/2 cup peanut butter(we didn't have cashew butter)
1/2 Cup mixed pepper strips
-

How To Make It:
-Heat Sesame oil in a large pot. Add onions and saute. When onions are almost cooked through, add peppers. Cook until onions are clear.


















-Add all seasonings, cook for one minute more, and then add Chicken breast, garlic, chicken broth, tomato paste, tomatoes, and peanut butter.
-stir until completely combined, cook until full heated, about 10 -15 minutes for us
